Sorry that I’ve been absent for a week, I was sick sick sick and sleeping sleeping sleeping.
This is one of my favourite quick and tasty meals that uses cheap ingredients and they are a big hit with my son. The trick to getting these to stick together and to brown well is to dry the potato as much as possible.

- Can of sweet corn
- 2 large potatoes
- 1 onion
- pinch of salt and pepper
- 1 tbs of fresh chopped coriander
- 2 tbs of cornflour
- Olive oil
Grate the potato and onion into a large bowl. Squeeze some of the liquid out of the potato and onion with your hands and pat with some paper towel.
Add the can of corn (without the liquid), the coriander, cornflour and salt and pepper to taste and mix together.
Heat the olive oil in a frypan, place handfuls of the potato mixture on the frypan flattening with a spatula, cook on medium heat for 5-8 minutes until brown, turn over and cook for a further 5 minutes.
